MUKIMO YA NJAHI

My mother always says that it’s important for a girl to learn how to cook. That’s why she gave me this lovely recipe that’s not only delicious but also nutritious. In my community we have a lot of mashed food so enjoy this recipe and be on the lookout as I give you more delicacies such as this one. This healthy meal is mostly given to lactating moms but can be enjoyed by the whole family.

Ingredients:

Black beans (Njahi) 4 cups

Green bananas 10

Ripe bananas 5

Spring onions

Oil

Salt

Procedure:

  • Boil the black beans. After they boil, pour out the first bunch of water and add more water and leave to boil. (Do this thrice) After they’re cooked, mash them.
  • Boil the green bananas, after they’re cooked, pour the water but leave some and add the ripe bananas and let them steam for a while.
  • Mash the bananas. Mix the mashed beans with the mashed bananas.
  • Heat the oil and add the spring onions and after they turn golden brown, add the mashed bananas and njahi mixture and then leave to cook for a while.

Serve with a stew of your choice and with a lovely serving of steamed veggies on the side.

 This meal serves 5.
